WHITE PEPPER

White pepper is made from the ripe berries of the pepper plant (Piper nigrum) after the outer skin is removed through a soaking and retting process, which gives it a milder, more earthy flavor than black pepper. It is frequently used in light-colored dishes like creamy sauces and soups where black specks would be undesirable, and can also be used in marinades and stir-fries.
